This recipe I created with Beets and Pineapple is sure to have you smacking your lips and licking your fingers!

As a kid

I have not had Beets since I was a child, about 4 years old to be exact.   I remember this because this was the first stand-off of many at the kitchen table with my Mom.  It ultimately ended in a compromise.  One bite for freedom from my seat at the table.  Now,  my Mom cooked 3 meals a day and she was an excellent cook, but she had a hard time convincing us to even taste veggies.

So, when I went to the grocery store I was very hesitant about buying beets.  But, it is July-August and they are in season.  This means they’re at their best, so I decided to give Beets another try.

I love Beets

And let me tell you, I am in love!  I created this beet recipe from the inspiration I got from the beet and pineapple juicing videos I saw all over youtube.  I figured if this combination is good when juiced then it must be good when eaten.  Right?

Ingredients
Servings: 2 people
Instructions
  1. Add 2 tbsp of ground curry to a pan and roast for 30-40 seconds continuously tossing (do not burn)
  2. Add 2 pats of butter to pan, melt, and mix with curry.
  3. Add diced Yellow bell Pepper and Onions to the mixture making sure to coat vegetables with melted butter and cumin.
  4. Add black pepper, garlic, ground coriander seeds, cumin, and chili powder, (only use half of your seasonings in this step)
  5. Cook for 1 Minute, constantly mixing and stirring
  6. Next, Add Beets to the pan. Now, season Beets with the rest of your Seasonings making sure to coat beets with seasoning and the pepper and onion mixture
  7. Add 1/4 cup of water or enough water to cover the bottom of your pot
  8. Cover pot/pan and simmer for 10-15 minutes on low heat
  9. After cooking time, taste beets. If more seasoning is needed add now. Along with Pineapple, pepper flacks (to taste), and marjoram.
  10. Mix well, add more water, Again add just enough to cover the bottom of the pot, cover, and cook for 5 more minutes on medium to low heat.
  11. After 5 minutes taste to make sure the seasoning is to your liking Add Serve!
