Hello again, I’m back with another simple and super easy recipe.
My family loves baked chicken breast and we eat it pretty often. I do my best to mix it up by preparing the breast in varies ways. I’ve crockpot, baked, smothered, bbq’d, and pretty much prepared chicken in everyway possible.
So, as I was in the kitchen trying to figure out what to do with my chicken breast, it dawned on me that I have never prepared chicken salad. Now, why haven’t I thought of this before?
So off to the refrigerator I go to see what ingredients are in there that I can use. Well, after scavenging through the refrigerator I came up with a winner. My family loved my creation. I call it “Skinny Chicken Salad.”

- 3 large chicken breast baked
- 3 tbs light mayo
- 3 tbs yogurt dressing ranch
- 2 tbs Dried Parsley
- 2 tbs olive oil
- 1/2 tsp salt
- 1/2 tsp blackpepper
- 1/2 tsp cayenne pepper
- 1/2 tsp accent
- 1/2 tsp garlic powder
- Preheat oven to 350 degrees and season chicken breast with dried seasoning and rub. Place 2 tbs olive oil in the bottom of a baking dish and spread.
- Place seasoned chicken breast in baking dish and bake for 25-30 min or until done. Time will depend on how large your breast are,
- Next use a fork to shred chicken breast.
- Then add 3tbs light mayo and 3tbs ranch yogurt dressing.
- Mix well add parsley and more seasoning if needed and your ready to serve.
*****Use as little or as much of the seasoning as you like. (season to your taste)
*****I topped chicken salad with sweet relish, but you can also mix it into the chicken salad
