Stewed Beef Tips with Sweet Peppers and Onions

I’m always tying to turn an old favorite recipe into a new favorite recipe by tweaking ingredients. Stewed Beef is always a hit at my house and tonight I took my family’s favorite beef tips in brown gravy and put a little spin on it.  I usually cook this meal over the stove and let it simmer on low for hours.  Well today’s recipe was cooked not over the stove, but in the slow cooker which made it a fix-it-and-forget-it meal. I’m used to cooking on the stove and old habits are hard to break.  But, lets face it.  When you have a busy family life being able to throw a few ingredients in a pot and walk away is great.  So, I whipped out my crockpot threw in my ingredients and went on with my chores.  Three hours later we had tender, delicious, beef with a thick rich gravy that was mouthwatering.  My family loved it!  I decided to serve over Quinoa instead of rice for a healthier option.  But, rice or potatoes would have been great also.

This is a recipe that I will be keeping in my recipe box for a repeat appearance.   On busy nights when I’m tired and I don’t’ feel like cooking I can let the Crockpot do all of the work.

Ingredients

Instructions
  1. Season Beef tips with spices of your choice. Then, cut both the onion and peppers in strips.
  2. Add the beef tips, onions and peppers, and 3 tbsp. of tomato paste to the crockpot along with 2 1/2cup of water. (just enough water to cover just over the top of the beef tips)
  3. Stir until tomato paste is mixed with water, add dried parsley and turn crockpot to high and cook 3hrs. Stir occasionally. And serve.

*This meal can be eaten over potatoes or rice or for a more healthy choice try Quinoa like I did here.  Quinoa is a great rice substitute.
