Spaghetti Squash Boats!
I’m always looking for creative ways to incorporate more vegetables into my diet. As a child I hated vegetables and did my best to avoid them at all cost. The reason I hated them is because I hated the taste. Now that I’m older and my taste buds have matured I find myself loving the same vegetables I hated in my youth and seeking recipes to add flavor to old favorites and a few new favorites.
Eating healthy can sometimes be a challenge and finding foods at a reasonable price that are great tasting is a task. So we go to the grocery store to buy foods that are considered healthy, but are clueless about what to do with them. I decided that I would try this recipe because I love spaghetti and meat sauce. I wanted to see if I could find a healthier alternative without giving up great taste.
I made this recipe last night, seasoned it with lots of herbs and spices and the results are in! It was Delicious! I was surprise at how tasty it was, but also at how much it tasted like my favorite spaghetti recipe and at almost half the calories. This is a great substitution to the spaghetti and meat sauce that I love so much.

- 1 lb ground meat
- 4 medium spaghetti squash
- 1/2 medium onion
- 1 medium tomato
- 2 tbsp olive oil
- 1 medium bay leaf
- 3 tbs parsley
- 3 tbs tomato paste
- 1/2 cup water
- Cut both squash in half length wise and spoon out the seeds. Place the Squash face down in a large pyrex dish. Cover the bottom of the Dish with water about 2/3 cup and Microwave on high for 15-20 min.
- In a large bowl add turkey ground and season to taste. Add 2tbsp. of olive oil to a large pan and heat. Now add seasoned ground turkey and begin to brown. Dice medium onion and add to the pan along with 1 tsp of parsley.
- Next, Dice medium tomato and add to pan. Add tomato paste and 1/2 cup water to pan. Stir and cook until paste has dissolved.
- Once the paste has dissolved add 1 bay leaf and the remainder of the parsley. Stir, cover, and simmer for 15min. stirring occasionally.
- Check the spaghetti squash using a fork to pierce the skin of the Squash. If done piercing the skin will be easily done. Next, use a fork to free the squash from the walls of the squash.
- Spoon cooked meat sauce into the spaghetti squash halves and mix. Add parmesan cheese and your ready to eat. * If you like you can put the Squash in the oven at 325 degrees until cheese has melted and serve!
- Your Spaghetti bowl is now ready to serve and for added taste. I sprinkled more parmesan on top.
*If you would like to know the seasonings I used they are salt, black pepper, garlic powder, paprika, and cayenne. You can season to your own taste.
