Skinny Chicken Salad

Hello again,  I’m back with another simple and super easy recipe.

My family loves baked chicken breast and we eat it pretty often.  I do my best to mix it up by preparing the breast in varies ways.  I’ve crockpot, baked, smothered, bbq’d, and pretty much prepared chicken in everyway possible.

So,  as I was in the kitchen trying to figure out what to do with my chicken breast,  it dawned on me that I have never prepared chicken salad.  Now,  why haven’t I thought of this before?

So off to the refrigerator I go to see what ingredients are in there that I can use.  Well,  after scavenging through the refrigerator and finding ingredients, I mixed it all up came up with a winner.

My family loved my creation.  I call it “Skinny Chicken Salad.”

Instructions
  1. Preheat oven to 350 degrees and season chicken breast with dried seasoning and rub. Place 2 tbs olive oil in the bottom of a baking dish and spread.
  2. Place seasoned chicken breast in baking dish and bake for 25-30 min or until done. Time will depend on how large your breast are,
  3. Next use a fork to shred chicken breast.
  4. Then add 3tbs light mayo and 3tbs ranch yogurt dressing.
  5. Mix well add parsley and more seasoning if needed and your ready to serve.
Recipe Notes

*****Use as little or as much of the seasoning as you like.  (season to your taste)

*****I topped chicken salad with sweet relish, but you can also mix it into the chicken salad
