The first thing we did was dice a 2 large onions and a medium sized bell pepper and put them in a bowl. Then, we add minced garlic and mix.
Next, we seasoned the mixed vegetables with salt, black pepper, cayenne and mix until all vegetables are covered with seasoning.
Now, make large slits in the pork roast with a knife and stuff the seasoned mix into the slits. (4-5 slits will do) Next, take the last of the seasoned mix and run the entire outside of the roast with it. (like a dry rub)
*** (If you did not make enough of the mixture for this step make a little more to make sure your roast is seasoned well.)
Put a small amount of oil at the bottom of the Dutch oven and coat it by rubbing the oil into the bottom. You can use a paper towel to spread it evenly. Now, place the roast inside with one half cup of water and place into the oven at 350 degrees uncovered. Cook in the oven uncovered until your roast is brown.
After the roast is browned place a few more onions into the bottom of your Dutch oven along with one cup of water and put the lid on your Dutch oven.
Let the roast cook for 3hrs or until completely cooked. Remember this roast was 9lbs so 3 hours was perfect. You may cook yours for a shorter or longer period of time depending on the size of your roast.
